Nicolas Rossignol belongs to the fifth generation of a family of winegrowers from Volnay. He is part of the dynamic group that assumed responsibility for their family estates in the 1990s. Starting on a small scale with just 3 hectares, he has diligently expanded his domain to cover 17 hectares, encompassing some of the most exceptional vineyards in Beaune, Pommard, Savigny Lès Beaune, and Volnay.
Nicolas adopts an adaptable approach to winemaking, taking full advantage of his modern winery located on the outskirts of Beaune. He maintains an open-minded stance regarding the choice between destalking and whole bunch vinification. His preference is for his wines to mature gradually in barrels, allowing for the development of greater aromatic complexity and contributing to the overall strength of the wine.
